ZESTY LIME THREE BEAN SALAD
Ingredients
2 c. Edamame
1 15-oz. can kidney beans, rinsed & drained
1 15-oz. can garbanzo beans (chickpeas), rinsed & drained
½ c. thinly sliced red onion
½ c. chopped fresh cilantro
1 tsp. finely shredded lime peel
¼ c. lime juice
¼ c. olive oil
Directions
- Prepare/Steam Edamame according to package directions. Drain in colander and rinse with cold water
- In a large bowl combine steamed soybeans, kidney beans, garbanzo beans, onion, and cilantro.
- In a small bowl whisk together oil, lime peel, lime juice, and ½ teaspoon Sea Salt. Pour over bean mixture and toss to coat. Cover and refrigerate. Stir well before serving.
